Milli’s Sweet Corn Muffins are absolutely delicious! Everyone loves to eat and that is a fact! However, not everyone enjoys cooking. My granddaughters are young and enthusiastic about almost everything though! They desire to learn everything possible and well, you really need to fuel that flame! Milli enjoys cooking almost anything and especially breakfast foods! I believe getting to crack eggs is just something any kid loves to do anyway! Sweet Corn Muffins – 4-H Competition

Being the 4-H president at her school has been a real honor for Milli. She was so excited to be elected as the president by her schoolmates! Recently they were assigned a baking competition and the project was cornbread muffins made from scratch. Milli began her research to come up with a recipe, not to mention the collaboration with her grandmother! Many children have a competitive nature built-in, but the idea to have fun is just as important as winning! Win, lose, or draw, if it’s fun the experience is positive no matter the results!

Sweet Corn Muffins

Keep things simple, especially cooking from-scratch recipes. No reason to re-invent the wheel or add bells and whistles here folks! These sweet corn muffins are absolutely amazing and go excellent with any southern-cooked meal! She made enough for the competition and the rest of the family too! These sweet corn muffins go great with pot roast, beef stew, vegetable soup as well as many other dishes, and put comfort in comfort food! We prepared (papa’s famous) herb-roasted garlic chicken, southern fried squash, mashed potatoes, and salad greens. Along with Milli’s sweet corn muffins that set it off just right!

Milli’s Sweet Corn Muffin Recipe Available Below:

Starting with the Ingredients:

  • 2 Farm Fresh Eggs
  • 1-1/4 cups of Milk
  • 1-1/3 cups of AP Flour
  • 2/3 cup of Cornmeal
  • 2/3 cup of Granulated Sugar
  • 1 Tbs. of Baking Powder
  • 1/2 Tsp. of Salt
  • 4 Tbs. of Melted Butter; (salted or unsalted)
  • 1/4 cup of Vegetable Oil

Once you have all of the ingredients for Milli’s Sweet Corn Muffins ready, Pre-heat the oven to 350 degrees. You will also need the following kitchenware items!

  • Large Mixing Bowl
  • Measuring cups & spoons
  • Whisk
  • Muffin Pan (Cupcake Liners Optional)

Using the large bowl, whisk flour, cornmeal, sugar, baking powder, and salt. Next, you will whisk in melted butter, milk, eggs, and oil. Whisk all ingredients together, then transfer the batter to the muffin pan.

Finally, bake at 350 degrees for 20 minutes, then allow 15-20 minutes to cool. Eat and enjoy along with any of your favorite southern comfort foods!
